Spicy Mussels

Today, we are making spicy mussels. Remember mussels have to be a prepared in a special way from live. If you are not sure, just buy mussels in the shells that have already been prepared.

What you need:
  • 250g prepared mussels in the shells (i.e boiled, steamed whatever, NOT raw)
  • 200g chopped tomatoes
  • 200ml coconut milk
  • 40g spring onions
  • 30g parsley
  • 20ml honey (or demerara if you prefer)
  • 3 green chillies
  • 1 lemon (or lemon juice)
  • 1 fish stock cube
  • Lebanese bread
  • hot house lettuce (or any lettuce you like)
First you need to chop the parsley, chillies and spring onions and halve the lemon.
Heat the tomatoes in a saucepan, add the parsley, chilli and spring onions and leave for 5 mins.
Add the coconut milk, lemon juice and demerara/honey (else this will be really sour. The lemon is to reduce that fishy smell!)
Finally add the mussels and the stock cube and let it simmer for about 10 mins.

While that is simmering, get your round plate. Warm the lebanese bread and use it as a base. Add some lettuce leaves to make a bed.

Serve the mussels on the lettuce bed and that's it. This should not take more than 25mins to make and if you did it right, it should be loking like this...






It actually tastes really nice too. I enjoyed making it, even though I had to take the trash out ASAP because of the fish smell! I hope you enjoy making it too.
